Quarantine Cooking

So, last year, I had received a 2020 calendar from the Food Bank. It was amazing like it was the dream calendar for a foodie like me. Each month had a picture of a different meal and some months even included recipes! On top of that, all the meals were researched to have the optimum nutrition level. How great is that? I loved it and decided to use it as my calendar for next year.

Right now, we are in 2020. The amazing calendar I had received from last year is great, but I don't feel like I have used it to its potential. In conclusion, I decided to make a recipe from the calendar. The recipe had to be vegetarian and the ingredients should be simple. Being in quarantine, not only are most ingredients out of stock, but we can't go to the grocery store as frequently as we used to. The recipe that filled these conditions was the Peanut Butter, Jam and Apple Overnight Oats. Now as for the ingredients, there was a bit of improvisation but nonetheless, the results were great!

Living through a global pandemic is quite difficult for everyone, especially for those that don't even have the necessary essentials to live. It's important that we all work together and support one another through these exceptional and difficult times. So, I encourage you all to donate and help out at local charities and food banks whenever possible and in any way you can. Together, we can make a difference.
